Infinite Monkey Theorem Winery Opens in October

What exactly is an urban winery? According to the founders of the Infinite Monkey Theorem Wine Lab, it's a place where no vineyards and no pretenses are definitely not a problem.
This unique concept was founded in a Quonset hut in downtown Denver and is being brought to Austin by co-founders Aaron Berman (the CFO) and Ben Parsons (the winemaker) to challenge perceptions about just what a winery can be. They claim to create "ridiculously good wines in seemingly chaotic environments."
The South Austin building that's home to the second outlet of their business is described as a "graffiti-strewn industrial space" with a staff that encourages the community to "help in the wine making process," exposing them to the "often-unseen grit of wine making." I'm guessing since their website instructs potential guests to shine their boots, iron their flannel, and wax their moustache, dressing up like Lucy and the Italian women will not be a requirement for winemaking here.
"It's been our focus to absorb Austin's culture into our space, not to recreate one from California, or France, or another famous wine region," said Berman. "We've grown our business because we do things against the grain and feel like we've found our Shambhala in Austin."
Though IMT doesn't tend vines or grow grapes, they do produce wines made with fruit purchased in Texas and Colorado. For their opening in October, they sourced grapes from the Texas High Plains region for a Texas Cinsault Rosé and will begin the 2015 harvest with several other grape varietals from that same appellation. IMT will also offer a range of wines based on Colorado grapes (who knew?) as well as a Dry Hopped Pear Cider for sale and tasting in the Wine Lab.
IMT products are already for sale in kegs, bottles, and cans in some Austin restaurants, bars, and stores. Look for the winery itself to open in October, just off South Congress in a reclaimed auto mechanics workshop where it will share space with a climbing gym and a new Buzzmill Coffee outlet just across the way. Wine and cider, beer and coffee, graffiti and exercise? If these things sound like the components to your personal mythical kingdom, the winery is scheduled to open next month.
