I Knead That Pastry Pop-Up at Métier

By Virginia B. Wood, January 14, 2015, 12:45pm, On the Range

Former Lenoir pastry chef Jasmine Jones struck out on her own in the fall of 2014 with a catering bakery called I Knead That where she creates made-to-order sweets and wedding cakes for the public and prepares baked good for local caterers. This weekend, the owners of Métier Cook's Supply welcome her for a pop-up pastry sale.

Jones is a Maine native and graduate of Boston University who moved to Austin in 2007. While working at Enoteca Vespaio, she became friends with then pastry chef Barrie Cullinan, who trained her as a baker. When Cullinan left Vespaio to open her own Amity Bakery, Jones became her assistant for a time before accepting the pastry chef position at Lenoir in May of 2013.

Now, she is the proprietor of her own company, and while she ultimately dreams of her own brick-and-mortar bake shop, currently she bakes in a commercial kitchen in West Austin. Her company website is still under constructions but look for her on Facebook.

She uses seasonal fruits, herbs, and vegetables in her breakfast baked goods, creating croissants, cinnamon buns, scones, quiche, and buttermilk biscuits. Her sweet treats include decorated cookies and a selection of French macarons, truffles, and caramels. The menu for this weekend's pop-up includes Jasmine's pastry items as well as a sneak peek at her Valentine's Day gift box sweets. Drop by to shop and nosh before the goodies are all sold out.
